Cactus KI to open Mexican summer pop-up The Prickly Pear next weekend • Glam Adelaide

Breakfast hotspot Cactus Kangaroo Island is launching a pop-up summer Mexican restaurant next Friday (October 28), called “The Prickly Pear Summer Cantina.” To meet the huge demand for evening dining on the island, The Prickly Pear will be serving authentic Mexican fare every Friday and Saturday through the end of summer.

The Prickly Pear is the brainchild of Cactus co-owners Louis Lark and Yen Aun Leow, alongside good friend, chef and expat Rachel Hannaford.

Inspired by recent travels, life in Mexico, and the history of the Cactus KI place, a pop-up Mexican joint seemed like the perfect way to share experiences and activate the space at night.

“I recently spent a month in Mexico where I met Rachel who was living as an expat in Mexico with her partner,” says Cactus co-owner and chef Louis Lark.

“I pitched the idea to him because there’s a huge demand for evening restaurants on the island. Rachel and her partner cook beautiful, authentic meals for themselves on KI and now they have a great opportunity to share that.

It should also be noted that prior to Cactus, a popular home-style Mexican restaurant once operated in the building called Yellow Ash & Chilli. When Cactus KI first moved in, there were bold Mexican colors and cactus prints adorning the worlds, while Cactus itself was never a Mexican restaurant. in itselfThe Prickly Pear will be an ode to the building’s Mexican history.

The Prickly Pear will serve an a la carte menu and a concise Mexican cocktail menu to start and explore dining options down the line. Louis says there will be some authentic dishes that you simply won’t be able to try anywhere else in South Africa and possibly the country.

One of these dishes is Tacos Derados with Birria, which is authentic in the region of Jalisco near the providence of Tequila. Traditionally made with goat cheese, the prickly pear team will cook this dish with lamb instead, accompanied by goat cheese, mozzarella, homemade spicy salsa.

Another one to watch is the CHILL-A-KILLEZ – Rachel’s version of traditional Mexican breakfast nachos! That’s something the Glam team would love!

The Prickly Pear cocktail menu will include classics such as Margaritas, Palomas and Mexico Mules, as well as craft beer and local wines provided by KI winery, The Stoke.

The pop-up will be open every Friday and Saturday, starting Friday, October 28, 2022.
