Most of us love Mexican food, but maybe not eat as much of it as we would like. These skewers from Chef Neha Deepak Shah are easy to prepare, nutritious and delicious – all factors that will make them a regular at your table.

Mexican kebabs with nuts and beans


2 teaspoons of oil
1 onion, finely chopped

3 to 4 garlic cloves, chopped

1 green chilli, chopped

2 tablespoons of tomato ketchup

½ teaspoon of chili flakes

1 tablespoon of red chili sauce

1 teaspoon of Kashmiri red pepper powder

½ teaspoon of oregano

Salt, to taste

Pepper to taste

½ cup black beans, cooked

½ cup of nuts

Peri-perished seasoning (optional)
1 tablespoon of chopped cilantro

For garnish :

Cheese slices
Mango sauce
Mint leaves


  1. Heat the oil in a non-stick pan.
  2. Add the onions, garlic and green pepper and sauté well for two to three minutes over medium heat.
  3. Add the ketchup, chili flakes, chili sauce, chili powder, oregano, salt and pepper to the pan. Mix well and cook for half a minute.
  4. Stir in the cooked beans and nuts and cook for a few minutes. You can add a little peri peri seasoning at this step (if using) to enhance the flavor.
  5. Add the chopped coriander leaves, mix well and remove from the heat. Cool the mixture then mix it into a paste. If necessary, cook the mixed mixture a little to dry it.
  6. Now divide the mixture into equal portions, make skewers and cook on a tawa over medium heat until nicely browned on both sides.
  7. Remove the skewers and top each with a slice of cheese (or part of a slice of cheese), a little mango salsa, nuts and mint leaves.
  8. Serve hot with a green chutney.
